Meatloaf with soy granules

Ingredients for 4 servings:

  • 150 g soy granules, fine
  • 450 ml vegetable stock
  • 100 ml milk
  • 1 onion(s)
  • 1 garlic clove(s)
  • 3 eggs
  • 150 g Gouda, young
  • 2 rolls from the day before
  • 1 bell pepper(s)
  • 1 bunch of mixed herbs
  • 1 tsp salt and pepper
  • Paprika powder
  • 2 tsp mustard
  • 50 g wholemeal breadcrumbs

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 2 hours 15 minutes

Boil the soy granules in 450 ml of vegetable stock for 10-15 minutes, then let them swell for 30 minutes. If the liquid isn’t enough, you can add more vegetable stock. Dice the onions, garlic, Gouda, bread rolls, and bell peppers and mix well in a bowl with the warm milk, egg, spices, and chopped herbs. Fold in the swollen soy granules. Thicken the mixture with the breadcrumbs. Line a loaf pan with baking paper and pour in the mixture. Bake in a preheated oven at 180°C (top/bottom heat) for 75 minutes. This dish tastes delicious with salad and fried potatoes or mashed potatoes. Tip: If you like, you can also stir hard-boiled eggs into the roast.
