Medieval crispy, freshly baked bread

Ingredients for 3 servings:

  • 750 ml water
  • 1 tsp salt
  • 2 cubes of yeast, fresh
  • 2 tbsp honey
  • 850 g flour
  • n. B. Flour , for dusting the work surface

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 30 minutes

Recipe based on the fantasy epic “A Song of Ice and Fire” by George RR Martin

Add yeast and honey to lukewarm water. Then add flour and knead well. Spread a little flour on the work surface and knead the dough for at least 5 minutes. Add a little more flour if necessary if the dough is too sticky. Knead until the dough forms a homogeneous mass. When you prick the dough with your finger and it returns to its original shape, the dough is ready. Place the dough in a clean bowl, cover with a towel, and let it rest in a warm place for 2 hours. When the dough has at least doubled in size, you can shape it into loaves of bread. To do this, divide the dough into three equal parts. Place the loaves on a baking sheet lined with baking paper and let it rest for about 40 minutes. Preheat the oven to 230°C. Before placing the loaves in the oven, dust them with a little flour and lightly score the tops with a knife. The trick is to get the crust really crispy. To achieve this, simply fill an ovenproof pot or similar container with water and place it in the oven underneath the loaves of bread. The steam from the water will give the loaves a nice crust. Bake for about 30 minutes. The loaves should be dark brown and sound hollow when tapped lightly.
