Mediterranean baked tofu

Ingredients for 2 servings:

  • 350 g smoked tofu, mildly smoked
  • 30 g soy sauce
  • 10 g paprika powder, hot
  • 10 g curry powder
  • 4 g oregano, dried
  • 100 g olives
  • 100 g cherry tomatoes
  • 100 g onion(s)
  • 100 g tomatoes, pureed
  • 50 g feta cheese, light
  • 12 g garlic, grated
  • 5 g plant cream
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Mix the soy sauce and spices to make a marinade. Halve the tofu, apply the marinade, and let it marinate in a casserole dish. Preheat the oven to 160°C (top/bottom heat). Dice the onions into bite-sized cubes, grate the garlic, halve the olives, quarter the tomatoes, and cut the feta into small cubes. Pour the vegetable cream into a pan and fry the onions until golden brown. Add the olives and tomatoes, fry briefly, season with salt and pepper, and pour over the tofu. Add the passata and garlic to the pan, bring to a boil, and then pour over the tofu. Sprinkle the feta over the top. Cook in the oven for 25-30 minutes. Approx. 546 kcal per serving.
