Mediterranean bread roll

Ingredients for 1 servings:

  • 500 g flour (type 405)
  • 1 cube of yeast (42 g)
  • 1 tsp, levelled sugar
  • 2 tsp, leveled salt
  • 250 ml water, warm
  • 1 sprig(s) rosemary, chopped
  • Sea salt, coarse
  • 50 g arugula
  • 10 g basil
  • 25 g pine nuts
  • 25 g cheese (Pecorino), grated
  • 25 g Parmesan, grated
  • 100 ml olive oil
  • 2 tbsp olive oil
  • 2 garlic cloves
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 45 minutes

Dissolve the yeast in lukewarm water. Add a pinch of sugar and set aside for about 10 minutes. In the meantime, combine the flour, salt, and sugar and make a well in the center. Carefully pour the dissolved yeast into the well and stir in some of the flour with a fork until it no longer comes together. Cover the starter dough and set it aside in a warm place for 20 minutes. In the meantime, prepare the pesto. Roast the pine nuts in a dry pan until golden brown. Peel and dice the garlic cloves. Heat them gently in some of the olive oil in a pan (about 1 minute). Do not allow them to brown. Wash the basil and arugula and spin them dry in a salad spinner. Place the pine nuts, garlic, arugula, and basil in a blender and chop. Finally, stir in the olive oil and grated cheese. Season the pesto with salt to taste. Knead the dough, adding 2 tablespoons of olive oil. Cover the dough again and let it rise in a warm place for 45 minutes. Then, briefly knead the dough and roll it out into a rectangle (approx. 20 x 40 cm). Spread some of the previously prepared pesto over the rolled-out dough (don’t spread it too thickly; the rest will be enough for delicious pasta the next day). Roll up the dough and place it seam-down on a baking sheet lined with baking paper and let it rise for another 25 minutes. Preheat the oven to 180°C (fan oven). Sprinkle the bread with the chopped rosemary sprigs and coarse sea salt. Bake for about 45 minutes. Perfect for a barbecue or on a beautiful salad plate.
