Mediterranean bread salad with spicy fried cheese

Ingredients for 4 servings:

  • 300 g arugula, washed
  • 400 g cocktail tomatoes
  • 400 g white bread, Tuscan
  • 250 g feta cheese or Italian sheep’s cheese
  • 1 jar artichoke hearts, pickled, alternatively radicchio or 1 avocado
  • 6 tbsp balsamic vinegar, dark
  • 2 tbsp honey
  • 1 sprig(s) rosemary, chopped
  • 1 lemon(s), the juice
  • 2 cloves garlic
  • 6 tbsp olive oil, to taste
  • some salt and pepper

Cut the white bread into cubes and chop the garlic. Fry the white bread in a non-stick pan with a little olive oil until lightly browned, stirring in the chopped garlic towards the end, and then set it aside. Chop the arugula, tomatoes, and artichokes (if you don’t like artichokes, you can substitute radicchio or oak leaf lettuce and/or avocado pieces). Cut the feta cheese into smaller slices and place them on a baking sheet lined with parchment paper. Season the cheese slices with pepper and chopped rosemary, drizzle with honey, and then bake at 180°C until lightly browned. Meanwhile, prepare a dressing with olive oil, balsamic vinegar, a little lemon juice, salt, and pepper. Before serving, add the white bread cubes to the salad, toss with the dressing, and then place the still-warm cheese slices on top of the salad.
