Stuffed zucchini from the oven

Ingredients for 3 servings:

  • 3 zucchini (300 g each)
  • 3 spring onions
  • 100 g cooked ham
  • 1 sachet of mashed potato powder, for 3 servings
  • 100 g flour
  • 2 tsp fried onions
  • 1 packet of baking powder
  • 3 tsp herbs (8-herb mixture), frozen
  • 1 pinch of salt
  • 1 pinch(s) pepper, white
  • 2 eggs
  • 250 ml milk
  • 100 g cheese (e.g. Gouda), grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Clean and wash the zucchini and spring onions. Halve the zucchini and hollow out the flesh, leaving a 0.5 cm thick edge. Reserve the gutted flesh. Cut a base into the bottom and place it on a greased baking sheet. Slice the spring onions into rings and the ham into strips. Finely chop the zucchini flesh. Mix the mashed potatoes, flour, fried onions, baking powder, frozen herbs, salt, pepper, eggs, and milk with a hand mixer and let it sit for 2 minutes. Fold in the ham, spring onions, zucchini flesh, and cheese. Sprinkle the zucchini with salt and pepper, add the potato mixture, and bake in a hot oven at 200-220°C (gas mark 3-4) on the second rack from the bottom for 45-50 minutes.
