Mediterranean chicory

Ingredients for 2 servings:

  • 2 chicory
  • 4 tbsp olive oil
  • 4 cl balsamic vinegar, red or white
  • 4 small tomatoes
  • 1 tbsp herbs de Provence
  • some salt
  • some black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

You’ll need a large pan with a lid. Remove the outer leaves from the chicory and cut them into finger-thick slices lengthwise. Heat oil in a pan, fry the chicory slices on both sides. Deglaze with the balsamic vinegar and immediately cover the pan. Simmer until the chicory is al dente (do not let it get too soft). Then halve the tomatoes (or cut larger tomatoes into eighths) and add them to the chicory; just heat through (you don’t want them to get mushy!). Season the vegetables with salt and pepper and sprinkle with Provençal herbs. Mix well. Arrange attractively on plates. Serve with baguette. Chicory can also be served as a side dish to lightly roasted meat.
