Mediterranean curry

Ingredients for 3 servings:

  • 100 g rice
  • 1 pinch of salt
  • some curry powder
  • e.g. chili
  • e.g. turmeric
  • 2 tbsp olive oil
  • ½ ginger root
  • ½ onion(s)
  • 2 bell peppers
  • 1 small zucchini
  • 3 tomatoes
  • 100 g sheep’s cheese
  • 4 tbsp yogurt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Bring the rice to a boil in plenty of salted water and simmer with the lid closed for about 15 minutes. Meanwhile, fry the finely chopped onion and ginger in olive oil. Clean and dice the bell peppers and add them to the pan. Season with curry, salt, and turmeric or chili, if desired. Dice the zucchini and add to the bell peppers. Finely chop the tomatoes and add to the curry. Season to taste and let simmer briefly with the lid closed. Dice the feta cheese and add to the vegetables. Once the cheese has melted, refine the curry with yogurt. Drain the rice and serve hot with the vegetables.
