Ingredients for 4 servings:
- 1 zucchini
- 1 bell pepper(s)
- 1 onion(s)
- 10 date tomatoes
- 200 g feta cheese
- 1 clove(s) garlic clove(s)
- 3 tbsp oil
- 1 ½ tbsp balsamic cream
- 3 tbsp tomato paste
- 1 tsp salt
- 1 pinch(s) of pepper
- 2 tsp herbs de Provence
- 1 tsp basil, dried
- ½ tsp chives, dried
- n. B. spice(s)
- 1 handful of seeds, mixed
Instructions
Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Quarter the zucchini lengthwise and then cut into slices no more than 5 mm thick. Cut the bell pepper into 3-4 cm strips, halve the tomatoes, dice the feta cheese, and slice the onion into rings. Place everything in a bowl. Combine all the remaining ingredients and the crushed garlic for the marinade in a bowl and mix well. Then pour over the vegetables and feta cheese, mix everything well, and let it marinate in the refrigerator for at least 15 minutes. Place the marinated vegetables and feta cheese in a baking dish and bake at 200°C (top/bottom heat) for 10 minutes, then at 250°C (top/bottom heat) for another 10 minutes. Garnish with the mixed seeds.
