Mediterranean Pasta Salad
The perfect mediterranean pasta salad recipe with a picture and simple step-by-step instructions.
- 300 g Pasta
- 150 g Cherry tomatoes
- 100 g Dried tomatoes in olive oil
- 70 g Black Greek olives (pitted)
- 100 g Parmesan
- 50 g Arugula
- 20 piece Basil leaves
- 100 g Parma ham in slices
- 12 tbsp Tim’S pesto verde
- 50 g Pine nuts
- 250 g Mozzarella balls
- 3 tbsp White balsamic vinegar
- 3 tbsp Olive oil
- 2,5 tsp Sea-Salt
- First, you put a pot of water on the stove and turn it on the highest level.
- Halve the tomatoes and remove the stem, put them together with the mozzarella balls in a large bowl. Halve the olives and add them to the tomatoes in the bowl.
- Is the water already boiling? If so, add a good pinch of sea salt to the pan and then add the pasta. Stir once and turn the heat down a little so that the water is still simmering. You can find the cooking time of the pasta on the packaging, one minute will be deducted from this, as the pasta still pulls in the salad.
- Roast the pine nuts in a pan without oil, they should take on some color but not turn black. As soon as the pine nuts are ready, let them cool and then add them to the bowl with the tomatoes.
- As soon as the pasta is done, pour it into a large sieve and pour cold water over it until it is cold. You have now interrupted the cooking process, let the wet pasta lie in the sieve for about 10 minutes until it is almost dry, so you don’t water down the delicious salad.
- Wash the rocket and spin it dry, cut it into bite-sized pieces and also put it in the bowl. Cut the Parma ham into finger-width strips, the sun-dried tomatoes into very fine strips and halve the basil leaves once; add these ingredients to the bowl as well.
- Now add the pasta, we also add the olive oil, the balsamic vinegar and Tim’s green pesto / pesto verde to our salad. Mix everything evenly and taste the salad.
- Take a vegetable peeler and use it to “peel” thin strips from the Parmesan, add these to the salad and carefully fold them under, as they break easily.
