Ingredients for 4 servings:
- 500 mg potatoes
- 1 carrot(s)
- 1 onion(s)
- 2 eggs
- 2 tbsp oat flakes, fine
- 40 mg flour
- salt and pepper
- basil pesto
- 2 tomatoes
- 1 ball of buffalo mozzarella
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and grate the potatoes. Finely chop the onion and add it to the potatoes. Add the eggs, flour, and oats. Mix everything together and season with salt and pepper. Fry the mixture in batches in a pan. Preheat the oven to 200°C (top/bottom heat). Spread the potato pancakes with 1/2 teaspoon of basil pesto. Arrange the tomatoes and mozzarella on top and bake the pancakes in the oven for 8-10 minutes. After baking, drizzle with a little more pesto.
