Mediterranean tomato sauce

Ingredients for 1 servings:

  • 400 g bell pepper(s), yellow
  • 700 g tomatoes
  • 100 g olives, black
  • 100 ml Balsamic vinegar Bianco
  • 1 tbsp olive oil
  • 250 g gelling sugar, 3:1
  • Salt
  • pepper

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

a delicious barbecue sauce with tomatoes, peppers and olives

Makes 6 jars (200 ml each). Clean and dice the bell peppers. Wash and dice the tomatoes. Pit and slice the olives. Heat the oil in a saucepan and sauté the bell peppers. Add the tomatoes, olives, and vinegar, and mix well with the preserving sugar. Bring to a boil while stirring, then simmer for 15 minutes, stirring occasionally. Season the sauce with salt and pepper and immediately fill the prepared jars to the brim. Secure with screw caps, turn over, and let stand on the lid for about 5 minutes. The sauce tastes great with grilled food, but also warm with pasta.
