Ingredients for 4 servings:
- 1 onion(s)
- 1 garlic clove(s)
- 400 g chicken fillet(s)
- 1 zucchini
- 1 bell pepper(s), red
- 30 g ginger
- 5 small carrots
- 1 bag of rice, cooked
- 600 ml vegetable stock
- salt and pepper
- Paprika powder, sweet
- 2 tbsp oil
- 1 tsp herbs de Provence
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
with chicken fillet
Cook the rice according to the package instructions. Clean and finely chop the onion, garlic, ginger, zucchini, bell pepper, and carrots. Dice the meat. Heat oil in a pan and brown the meat. Remove from the drippings and set aside. Brown the vegetables in the drippings, sprinkle with paprika, and add the broth. Add the meat and simmer for 5 minutes. Add the herbs and season with salt and pepper. Divide the rice among deep plates and top with the broth.
