Ingredients for 4 servings:
- 1 kohlrabi, diced (do not discard the leaves)
- 3 potatoes, diced
- 1 carrot(s), sliced
- 1 onion(s), diced
- e.g. tomato paste
- 1 liter vegetable broth, approx.
- some coriander
- some pepper
- 150 g parsley, chopped
- olive oil
- salt and pepper
- Thyme
- rosemary
- possibly chili powder
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Sauté the chopped onions in olive oil in a pan. Add the carrots and sauté briefly. Add the tomato paste and then the vegetable stock. Then add the potatoes and kohlrabi and bring to a boil. Season with salt, pepper, thyme, rosemary, and coriander. Finally, add the finely chopped kohlrabi leaves and parsley and season again. Cook until the vegetables are cooked through, adding more tomato paste and vegetable stock if necessary. There should be enough tomato paste to give them a nice reddish color. If desired, you can add red chili powder for extra flavor.
