Mediterranean Vegetables with Pasta
The perfect mediterranean vegetables with pasta recipe with a picture and simple step-by-step instructions.
- 1 tbsp Margarine for frying
- 1 piece Diced onion
- 2 piece Red peppers cut into bite-sized pieces
- 2 piece Zucchini cut into cubes
- 1 El Vegetable broth powder
- Salt, pepper, paprika powder
- 1 tsp Italian herbs
- 1 Garlic clove pressed
- 1 Can Pizza tomatoes canned
- 10 piece Black pitted olives and halved
- 10 piece Cherry tomatoes cut in half
- 1 tbsp Tomato paste
- In addition
- Pasta to taste:
- Brown the prepared onions, peppers and zucchini cubes in the margarine
- Season with vegetable stock, salt, pepper, paprika and the herbs
- Add the garlic and let the vegetables cook for about 5 minutes.
- Now add the pizza tomatoes, tomato paste and olives
- Let cook for another 5 minutes and then add the halved tomatoes.
- Let the vegetable mixture steep for a few more minutes with the lid on.
- Just before serving, fold in the separately cooked noodles.
