Ingredients for 4 servings:

  • 100 g mustard seeds, yellow (sinapsis alba)
  • 80 ml water
  • 60 ml white wine vinegar 5%
  • 2 tbsp, levelled sugar
  • 1 tbsp, leveled salt

Instructions

Working time approx. 15 minutes; Rest period approx. 2 days; Total time approx. 2 days 15 minutes

Basic recipe

Grind the mustard seeds in small batches to prevent the mustard from getting too warm (30 degrees Celsius). Blend all ingredients with a hand mixer for about 5 minutes until smooth. Pour the mustard into jars and refrigerate. After about 2 days, the mustard will have developed its full flavor. Since ground mustard seeds have a preservative effect, no additives are needed.
