Melon and cucumber salad with feta

Ingredients for 4 servings:

  • 1 cucumber(s)
  • ½ honeydew melon(s)
  • 250 g blackberries
  • 150 g feta cheese
  • ½ bunch mint
  • 2 tbsp wine vinegar
  • 2 tbsp rapeseed oil
  • salt and pepper

Wash the cucumber, peel if desired, halve lengthwise, and cut into thin slices. Dice the melon and feta cheese. Wash the blackberries. Place everything in a bowl. Wash and roughly chop the mint. Whisk together the vinegar, oil, salt, and pepper to make a dressing and drizzle over the salad. Sprinkle with mint to finish.
