Melon and shrimp salad with peanuts

Ingredients for 2 servings:

  • ½ melon(s) (cantaloupe or Charentais)
  • 120 g cooked shrimp
  • 1 spring onion(s)
  • 1 garlic clove(s), crushed
  • 0.33 tsp ginger, grated
  • Chili pepper(s) without seeds, quantity according to spiciness and taste, very finely diced
  • 2 tbsp lime juice
  • 2 tbsp fish sauce (Nuoc Nam)
  • ½ tsp palm sugar, crushed
  • 1 tbsp, heaped coriander leaves
  • 1 tbsp, heaped mint leaves
  • 2 tbsp peanuts, roasted

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

Asian spiced

Mix the lime juice, garlic, ginger, chili, palm sugar, and fish sauce to make a dressing. Toss the shrimp with it and let it marinate for about ten minutes. In the meantime, deseed and peel the melon and cut it into bite-sized pieces. Trim and wash the spring onions and slice them into rings. Roughly tear the coriander and mint leaves. Add everything, along with the peanuts, to the shrimp in the dressing and season to taste.
