Melon caviar or cucumber caviar

Ingredients for 3 servings:

  • 500 g juice (melon or cucumber juice)
  • 2 g sodium alginate
  • 2 ½ g Calcic
  • 500 g water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Molecular cuisine with fake caviar

Mix the alginate with 1/3 of the melon juice. Add the remaining 2/3 of the juice, blend, strain, and let it rest. Dissolve the calcic acid in water. Fill a syringe with the melon-algin mixture. Inject this mixture drop by drop into the calcic acid solution. After 1 minute, strain the caviar and rinse it in water. Cucumber juice is also suitable for making caviar instead of melon juice. In the photo, I’ve arranged the cucumber caviar in a caviar tin.
