Bruschetta with tomatoes and strawberries

Ingredients for 8 servings:

  • 12 slices of ciabatta or baguette
  • 12 cherry tomatoes
  • some strawberries
  • 2 tbsp basil, cut into fine strips
  • some pepper, freshly ground
  • some salt, coarse
  • 1 garlic clove(s)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a small bowl, combine the olive oil and balsamic vinegar with some freshly ground pepper and a pinch of salt. Finely slice the basil and mix in. Cut the cherry tomatoes into eighths. Cut the strawberries into pieces about the same size as the tomato pieces. There should be about an equal number of strawberry and tomato pieces. Add both to the bowl and toss well with the dressing. Meanwhile, toast the bread slices under the broiler, in a dry pan, or in the toaster oven until crisp and lightly browned. Rub the slices with the garlic clove and spread the tomato mixture on top. If desired, top with some coarse sea salt, freshly ground pepper, and/or some additional basil and serve immediately.
