Melon Gazpacho

Ingredients for 4 servings:

  • 1 honeydew melon(s), approx. 1025 g
  • 1 watermelon(s), approx. 1025 g
  • 125 ml water
  • 2 organic limes, zest and juice
  • 1 chili pepper(s), yellow

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Deseed the honeydew melon, scoop out the flesh, and blend it with half of the water in a blender. Deseed and core the watermelon. Blend three-quarters of the flesh with the remaining water, the juice and zest of the limes, and the deseeded and coarsely chopped chili pepper. Combine both melon purees, scoop out the remaining quarter of the watermelon, and add to the soup. Serve very chilled.
