Melon salad with feta

Ingredients for 4 servings:

  • 1 Galia melon
  • 1 zucchini, approx. 250 g
  • 3 tomatoes
  • 100 g feta cheese
  • 30 olives, black
  • ½ iceberg lettuce
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt and pepper
  • lemon juice
  • 1 tsp honey
  • 125 ml natural yogurt
  • 2 spring onions

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and deseed the melon, and cut into small pieces. Also cut the zucchini, tomatoes, and feta into small pieces, and finely chop the onion. Mix everything with the olives. Mix together the dressing ingredients. Arrange the cleaned and shredded iceberg lettuce in a bowl, top with the melon mixture, and pour the dressing over it.
