Ingredients for 4 servings:

  • 500 g spaghetti, broken in half
  • 1 onion(s), cut into strips
  • 2 garlic cloves, cut into strips
  • 400 g tomatoes, chopped
  • 400 g beans, black
  • 400 g corn
  • 1 tsp paprika powder
  • 1 liter vegetable broth, boiling
  • 1 tbsp Sriracha sauce
  • 2 tbsp olive oil
  • salt and pepper
  • 1 avocado(s), diced
  • Coriander, chopped
  • Cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 11 minutes; Total time approx. 26 minutes

Combine the spaghetti, onions, garlic, tomatoes, beans, corn, and paprika in a saucepan. Pour in the vegetable broth, then add the Sriracha sauce and olive oil. Cover and simmer for about 10-11 minutes, stirring frequently. Season with salt and pepper to taste. To serve, top with avocado, cilantro, and cheese.
