Mexican-style chicken strips

Ingredients for 2 servings:

  • 400 g turkey schnitzel or chicken breast fillet
  • 1 can of corn
  • 2 peppers, red, diced
  • 150 ml chicken broth
  • 2 tbsp mustard, medium hot
  • 1 tbsp lemon juice (also concentrate)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the turkey cutlets into small pieces and fry them in a pan. Add the drained corn, diced peppers, and chicken broth. Season with mustard, lemon juice, salt, and pepper, and simmer for 10 minutes. Serve with rice and beer.
