Ingredients for 1 servings:
- 50 ml milk (UHT milk 1.5% fat), room temperature
- 100 ml oil, neutral, room temperature
- ½ tsp mustard
- ½ tsp horseradish (creamed horseradish)
- Salt
- 1 dashes lemon juice

Pour 50 ml of room-temperature milk into the narrow, tall bowl of a hand blender, then add the mustard. Whisk with the hand blender until fluffy. Slowly add the oil drop by drop or in a thin stream, blending with the hand blender until the mayonnaise thickens (about 5 minutes). If the mayonnaise is thick, you may not need to add all the oil, as the mayonnaise will then be set. Season lightly with salt, a little horseradish, and lemon juice. Keeps in a jar for about 1 week.
