Millet salad with falafel

Ingredients for 2 servings:

  • 200 g millet
  • 2 m.-large tomato(s)
  • 150 g feta cheese
  • 1 bunch of basil
  • 2 tbsp oil
  • 2 tbsp balsamic vinegar
  • some salt
  • 1 bag of ready-made falafel mix

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Rinse the millet and boil it in a pot of water with a little salt for 8-10 minutes. Then let the millet swell and cool. Chop the tomatoes and basil into small pieces. Dice the feta. Mix the oil, vinegar, and salt to make a sauce. Mix the millet, tomatoes, basil, feta, and the sauce. Let the salad marinate while you prepare the falafel according to the package instructions. Serve the warm falafel with the millet salad.
