Millet with mushrooms

Ingredients for 2 servings:

  • 150 g millet
  • 400 g mushrooms or other mushrooms
  • ½ stalk(s) leek
  • 350 ml vegetable stock
  • some oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash the millet (washing removes any tannins that may have been left over during processing). Chop the leeks and mushrooms and fry them in a little oil. Mix the millet with the vegetables. Pour over the vegetable stock. Simmer for 25 minutes at the lowest heat. Turn off the heat for the last 10 minutes and let the pot stand with the lid on.
