Minced Beef and Vegetable Curry

  • 400 g Minced meat
  • 1 Pc. Onion
  • 250 g Mushrooms
  • 1 tbsp Palm oil, alternatively ghee or coconut oil
  • 1 Glass Indian curry sauce from Alnatura, 325 ml
  • 1 tsp Turmeric
  • Salt pepper
  • 2 handful Fresh spinach leaves
  • 2 tbsp Lemon juice
  • 0,5 bunch Coriander or parsley
  1. Fry the minced meat and chopped onion. I always do this without adding fat because enough fat comes out when frying minced meat.
  2. Heat palm oil in another pan and briefly fry the sliced ​​mushrooms over medium to high heat. Add to the minced meat. Add the curry sauce and half a glass of water. Bring to the boil, then simmer for a few minutes over medium heat. Season with salt, pepper and turmeric. Add the washed spinach and let it collapse. Season to taste with lemon juice.
  3. Sprinkle with chopped coriander to serve. This fits z. B. rice, spaghetti or zucchini noodles.
