Minced meat and rice pan with raisins and peanuts

Ingredients for 3 servings:

  • 1 piece(s) ginger root
  • 1 sprig of mint
  • 400 g minced meat
  • 1 large leek(s)
  • 2 garlic cloves
  • 400 ml apple juice
  • 2 tbsp peanut butter
  • 40 g peanuts, roasted
  • 4 tbsp raisins
  • 300 g long grain rice
  • 600 ml broth
  • e.g. natural yogurt
  • Cayenne pepper
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the ginger and garlic. Finely chop both and fry them in a pan with the minced meat in hot oil. Add the rice and sauté briefly. Add the apple juice, broth, peanut butter, and raisins. Season with salt. Cover and simmer for about 15 minutes. Trim the leek and slice it into rings. Add it to the rice pan and sauté for another 5 minutes. Season with salt, pepper, and cayenne pepper. Sprinkle with the roasted peanuts and chopped mint. Top with natural yogurt, if desired.
