Ingredients for 2 servings:
- 180 g minced beef
- 1 bunch of spring onions
- 1 garlic clove(s)
- 3 tomatoes
- 100 g pineapple, fresh
- 1 tsp vegetable oil
- 1 tsp curry
- 150 ml vegetable stock
- 70 ml coconut milk
- 1 tbsp coriander, chopped
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Wash the spring onions and slice into rings. Crush the garlic. Chop the coriander. Heat the oil in a pan and fry the minced meat. Add the spring onions and garlic and fry. Add the curry powder and fry briefly. Deglaze with the broth and coconut milk and cook for about 10 minutes. Wash the tomatoes and dice them with the pineapple, add them to the minced meat, and cook for about 5 minutes. Stir in the coriander and season with salt, pepper, and more curry powder, if desired. Serve with rice.
