Minced meat oriental style

Ingredients for 4 servings:

  • 1 large onion(s)
  • 100 g peach(s), dried
  • 500 g minced meat (beef)
  • 1 ½ tbsp curry powder, mild
  • 50 g sultanas
  • 300 ml meat broth
  • lots of parsley, flat, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the onions. Chop the peaches. Fry the minced meat in a hot pan or wok over medium heat without adding any fat for about 10 minutes, until browned, stirring occasionally. Be careful not to overcook or burn the minced meat (you can also prepare minced pork or lamb in the same way). Stir in the curry powder and diced onion and fry for 5 minutes. Once the onion is soft, stir in the dried peach pieces and sultanas. Add the stock and reduce the heat. Simmer uncovered over low heat for about 15 minutes, until the meat is cooked and the peaches are soft. Sprinkle with plenty of chopped parsley and serve hot. Serve with cooked long-grain rice or al dente egg noodles. Serve with broth with egg custard or julienne vegetables as a starter. For dessert, try ice cream. Tips: Dried peaches are available in well-stocked supermarkets and fruit stores. You can also substitute them with dried apricots.
