Marinated pork loin with peaches

Ingredients for 2 servings:

  • 500 g pork loin(s)
  • 5 tbsp mango chutney
  • 5 tbsp soy sauce, dark
  • 2 tsp oil
  • 1 lemon(s)
  • 1 tsp coriander
  • 3 peach(s), ripe, firm
  • 1 tsp cane sugar

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Cut the loin into 2 cm thick slices, flatten them slightly, and place in a bowl. Grate the zest of the lemon and squeeze out the juice. Lightly crush the coriander seeds in a mortar and pestle. Mix the chutney, soy sauce, 1 teaspoon of oil, coriander seeds, lemon zest, and juice and pour over the meat. Marinate in the refrigerator for at least 2 hours, turning occasionally. Wash, dry, pit, and slice the peaches. Heat 1 teaspoon of oil in a pan. Add the peaches to the pan and sprinkle with sugar. Turn after 1 minute, cook for another 1 minute—no longer! Remove from the pan. Remove the meat from the marinade and cook in the pan for 8-10 minutes. Reduce the heat, pour the marinade over the meat, and cook for another 2 minutes. Add the peaches, season with soy sauce, and serve immediately. Serve with rice.
