Ingredients for 8 servings:
- 150 g leek
- 100 g celery
- 100 g potatoes, diced
- 100 g carrot(s)
- 200 g diced tomatoes
- 100 g beet(s), white
- 100 g Parmesan, grated
- 100 g rice (long grain rice)
- 100 g bacon (fatty smoked bacon)
- 100 g butter
- 100 g pasta (macaroni)
- 30 g onion(s), finely chopped
- 1 tbsp parsley, chopped
- 1 clove(s) garlic
- 1 ½ liters of meat broth
- pepper
- Salt
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Clean the vegetables and cut into strips. Sauté the onion in butter. Add the strips and sauté for 15 minutes. Add the meat broth and season. Break the macaroni into pieces, add the rice, potatoes, and tomatoes. Let the soup simmer for 30 minutes. Sauté the bacon and add it to the soup with finely chopped garlic. Garnish: Sprinkle with parsley when serving, and serve the Parmesan cheese separately.
