Mini Ham Croissants

- 250 g Puff pastry
- 1 piece Shallot
- 3 tablespoon Finely chopped parsley
- 1 tablespoon Butter
- 1 teaspoon Mustard
- 2 tablespoon Cream
- 1 tablespoon Lowfat quark
- 1 piece Egg
- Salt
- Pepper from the grinder
- Chop the shallot very finely and cut the ham into fine cubes.
- Sauté the very finely chopped shallot in the clarified butter, sauté the finely chopped parsley with it. Let cool down a little, add the low-fat quark, the single cream and the finely diced pieces of ham and mix. Season to taste with salt and pepper from the mill.
