Ingredients for 1 servings:

  • 50 g candied lemon peel
  • 50 g currants
  • 50 g almond(s), ground
  • 250 g flour
  • 1 tsp, leveled baking powder
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 1 tsp rum flavoring
  • 1 egg(s)
  • 150 g butter, soft
  • 1 pinch of salt
  • Sugar (vanilla decorative sugar)

Finely chop the candied lemon peel, add it to a mixing bowl with the currants and almonds, and mix. Mix the flour with the baking powder and sift it in. Add the remaining ingredients and mix everything with a mixer (dough hook) until you have a dough. On a lightly floured surface, shape the dough into pencil-thick logs and cut into pieces about 4 cm long. Place two pieces next to each other, place a third piece in the middle, and gently press them into the Stollen shape. Place the mini Stollen on a baking sheet lined with baking paper and bake in a preheated oven (180°C) for about 12 minutes. Once cooled, sprinkle with decorative sugar.
