Mirabelle cake with vanilla pudding

Ingredients for 1 servings:

  • 220 g mirabelle plums
  • 300 g flour
  • 120 g butter
  • 150 g sugar
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1 pinch of salt
  • 2 eggs
  • ½ liter of milk
  • 1 packet of vanilla pudding powder
  • 1 piece(s) margarine

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Beat the eggs, sugar, baking powder, and salt until fluffy. Roughly cut the butter into pieces, add it to the flour, and then add it to the egg mixture. Knead with a hand mixer until a smooth dough forms. Grease a 26cm baking pan with margarine or line it with baking paper. Roll out 2/3 of the dough onto the bottom of the pan. Mix the vanilla pudding powder with 1 tablespoon of sugar and 5 tablespoons of cold milk until lump-free. Bring the remaining milk to a boil and remove from the heat. Add the mixed vanilla pudding powder, stirring constantly. Bring back to a boil briefly. Pour the warm pudding over the rolled out dough. Pit the mirabelle plums and cover the pudding with it. Form crumbles from the remaining dough and spread them over the mirabelle plums. Bake the cake in a preheated convection oven at 180°C for about 35 minutes.
