Mirabelle plum compote

Ingredients for 1 servings:

  • 400 g plum(s), yellow
  • 400 g mirabelle plums
  • 150 g sugar
  • 4 cl brown rum
  • 800 ml water
  • 2 stalk(s) cinnamon
  • 1 vanilla pod(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Happiness in a glass

Put the sugar in a saucepan and let it melt. When it starts to turn slightly brown, deglaze with the rum immediately. Add the water and spices. Pit the plums and mirabelle plums, halve or quarter them, and divide them between the jars. Pour the stock over them and seal the jars. Place the jars in a saucepan and fill with enough water to come just over halfway up. Heat to at least 90 degrees Celsius. When bubbles start to form in the jars, turn off the heat but let the jars steep for another 20 minutes with the lid on. Once the time is up, remove the jar clamps and let them cool. Only when the compote is completely cooled should you remove the jar clamps (if there are any). Tastes great with steamed dumplings, Kaiserschmarren (sweet pancakes), or just on its own!
