Mix Dim Sum

The perfect mix dim sum recipe with a picture and simple step-by-step instructions.

  • 1 bunch Spring onion
  • 200 g Duck breast
  • Peking Duck Sauce
  • Char Siu sauce
  • Frozen wonton pasta sheets
  • Chili
  1. Cut the skin of the duck legs into a diamond shape. Put the duck leg with the skin side in a cold pan and then turn on the stove, so the fat runs out nicely and the skin becomes crispy.
  2. Then put the duck legs in the oven at 80 degrees for about 80 – 90 minutes.
  3. Cut the duck meat into very, very small cubes and place in a bowl. Roughly dice the spring onions, ginger and chilli and chop very finely with the electric lightning chopper and pour over the diced duck. Season to taste with lime juice.
  4. Now add the Char Siu sauce and the Peking Duck sauce and mix everything very well. Now always brush a wonton sheet with a little egg white, add a teaspoon of the duck meat and seal
  5. For steaming, I always use the bamboo steaming pots from the Asian store, which I line with baking paper. Then put the dim sums on the baking paper. Steam for 10 minutes.
