Mixed vegetables with prawns in an orange and lemon sauce, Ukurt style

Ingredients for 2 servings:

  • 1 zucchini
  • 2 carrots
  • 500 g mushrooms
  • 1 red bell pepper(s)
  • 1 large orange(s), juice
  • 1 large lemon(s) or lime, juice
  • 100 g feta cheese
  • 1 pack of frozen king prawns
  • 1 piece(s) butter
  • 1 shot of white wine vinegar
  • 1 dashes olive oil
  • 1 bunch of chives

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Either cut all the vegetables into strips or roughly chop them. Heat the butter and olive oil in a pot or pan and add the prawns. When the prawns have browned, stir in the vegetables and put the lid on. Stir occasionally until the carrots are firm to the bite, but not cooked through. Then add the lemon/lime and orange juice and the white wine vinegar. Simmer over medium heat for a few minutes. Now crumble the feta cheese over the top and mix everything together. Be careful, this goes very quickly, as the cheese melts quickly. Season with salt and pepper and scatter the finely chopped chives on top when serving.
