Ingredients for 4 servings:

  • 250 ml milk
  • 300 ml cream
  • 1 vanilla pod(s)
  • 1 pinch of salt
  • 3 egg yolks
  • 4 tbsp sugar
  • 3 tbsp espresso powder

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Total time approx. 35 minutes

for the ice cream machine

Pour the milk and cream into a saucepan. Split the vanilla pod and scrape out the seeds, then add both the seeds and the pod to the milk and cream mixture. Add a pinch of salt and heat everything while stirring until just before boiling. Remove the vanilla pod. In a separate bowl, whisk the egg yolks and sugar until creamy. Slowly pour the warm milk and cream mixture into the egg yolk and sugar mixture while stirring continuously. Add the espresso powder and mix well. Pour the mixture into the ice cream maker and freeze. Serve with eggnog and ice cream cones, for example.
