Ingredients for 1 servings:
- 500 g flour (wholemeal)
- 250 g butter, cut into small pieces
- 1 packet of vanilla sugar
- 140 g cane sugar (raw cane sugar)
- 1 banana(s)
- 3 eggs

Banana shortcrust cookies
Put the flour in a mixing bowl and scatter the butter pieces over the flour. Make a well in the flour and add the eggs. Mix the sugar with the vanilla sugar and sprinkle over the flour and butter. Knead well (I like to do this by hand). Peel and mash a banana, and knead it in. Place it on two baking sheets lined with parchment paper. Roll out the dough, cut out cookies, and distribute them on the baking sheets (keep the dough and serve it in a cool place if possible). Bake in a preheated oven at 175°C (top/bottom heat) for about 10 minutes.
