Ingredients for 4 servings:
- 500 g beef fillet(s)
- 2 onions
- ¼ liter broth
- 100 g mushrooms, steamed
- 2 gherkins, diced
- ⅛ liter sour cream
- 40 g butter
- 30 g flour
- Mustard
- Salt
- lemon juice
- 40 g butter
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Roughly chop the onions and fry in butter until golden brown, dust with flour, and add the stock. Simmer the sauce for 15 minutes, season with mustard, salt, and lemon juice, and finish with sour cream. Bring the mushrooms and cucumbers to a boil in the sauce. Cut the meat into cubes or strips and sear them thoroughly. It should remain pink on the inside, as it tastes very leathery when cooked through. Add the meat juices and the meat to the sauce and toss briefly. Do not return to the boil!
