Monkfish Spanish style

Ingredients for 4 servings:

  • 1 kg monkfish
  • 100 g olives, black
  • 60 g capers
  • 4 tomatoes
  • e.g. oregano
  • e.g. basil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the monkfish, cut it into pieces, and place it in a baking dish. Wash the tomatoes and remove the stems. Halve them and place them among the monkfish pieces along with the olives. Sprinkle the herbs among the pieces and season with salt and pepper. Bake in a preheated oven at 175°C for about 30 minutes. Add the capers just before the end of cooking. Serve immediately.
