Monk's beard salad

Ingredients for 4 servings:

  • 300 g monk’s beard
  • some olive oil for frying
  • 2 tbsp balsamic vinegar
  • 1 dash of lemon juice
  • some Parmesan, freshly grated
  • possibly salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Sauté the monk’s beard in olive oil over medium heat for about 5 minutes; it should still be firm to the bite. Add the balsamic vinegar and lemon juice and stir. Ladle onto plates and grate fresh Parmesan cheese over the top. Season with salt and pepper to taste; I don’t. Chanterelle mushrooms go very well with this. It can also be served as a vegetable without cheese, but it will be a bit softer.
