Ingredients for 4 servings:

  • 2 cups yellow lentils (Moong Dal)
  • 2 garlic cloves
  • 2 tbsp ghee (brown butter)
  • 1 pinch of asafoetida
  • ½ tsp turmeric
  • 1 ½ tsp salt
  • ¾ tbsp cane sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean the yellow lentils and soak them in water. Follow the instructions on the package. Heat the brown butter and fry the garlic in it. Add the lentils, stir, and bring to a boil with the water. Remove any foam that forms. Add the asafoetida and turmeric and cook until tender. Puree the lentils and mix in the required amount of water—about 1.5 cups—along with salt and sugar. Bring the mixture to a boil briefly and serve with rice. Season the dal and rice mixture with ghee and a squeeze of lemon juice, to taste.
