Ingredients for 4 servings:
- 200 g lentils, red
- 1 shallot(s)
- 1 spring onion(s)
- 200 ml coconut water
- 10 g Purple Curry (spice mix)
- 1 organic lime(s), zest and juice
- 200 ml coconut cream
- 1 mango(s)
- ½ bunch mint
- oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Indian evening
Finely dice the shallot and spring onion and sauté them in a little oil with the curry and lentils for about 4 minutes, then deglaze with the coconut water. Simmer gently for about 15 minutes (adding a little more water if necessary). Mix the coconut cream with the finely chopped mint and season with the zest and juice of the lime. Peel the mango and cut it into strips or cubes. Place the lentils on a plate and serve with the spiced coconut cream and the mango.
