Wonderfully exotic for Mediterranean meat

Briefly roast the cumin in a pan until fragrant. Crush in a mortar. Peel the garlic, finely dice it, and crush it in a mortar. Stir in the paprika and cayenne pepper and toss everything with olive oil. Transfer to a tightly sealed jar and store in the refrigerator. This can be used to marinate meat for Moorish skewers, scaloppine, or Iberico chops overnight, then grill or roast it the next day.
