Moroccan grilled fish brochettes

Ingredients for 4 servings:

  • 5 clove(s) garlic, chopped
  • ½ tsp paprika powder
  • ½ tsp cumin, ground
  • 1 tsp salt
  • 2 pinches of cayenne pepper
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp fresh coriander, chopped
  • 675 g fish, e.g. halibut, sea bass, snapper or turbot, cut into pieces
  • 4 green bell peppers, cut into pieces
  • Lemon(s), quartered

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Combine the garlic, paprika, cumin, salt, cayenne pepper, oil, lemon juice, and coriander in a large bowl and mix well. Add the fish to the marinade, cover thoroughly, and let it marinate for at least 30 minutes, but preferably 2 hours. Alternatively, refrigerate overnight. Heat the grill. Alternate the fish pieces with the paprika on wooden or metal rods. Grill the brochettes under the hot grill for 2-3 minutes on each side. Serve with lemon wedges. Serve with grilled zucchini slices and red bell pepper pieces.
