Ingredients for 4 servings:

  • 1 ½ kg kale, fresh
  • Salt
  • 2 onions
  • 60 g lard
  • 4 bratwurst, raw, uncooked
  • ¼ liter of water
  • pepper
  • 4 sausages (Mettenden), smoked
  • 1 kg potatoes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Kale stew

Clean and wash the kale. Bring a large pot of water to a boil. Lightly salt the kale and cook it in batches for 5 minutes. Peel and finely dice the onions. Heat the lard. Sauté the diced onions. Add the sausages and brown them on all sides. Add the kale to the sausages and sauté briefly. Deglaze everything with water. Season with salt and pepper, and place the Mettenden sausages on top. Cover and cook the kale for about 1 hour. Meanwhile, peel and dice the potatoes and finish cooking in salted water. Season the kale again generously and stir in the cooked potatoes. Serve hot.
