Mozzarella in vine leaves

Ingredients for 4 servings:

  • 3 garlic cloves, chopped
  • 4 anchovies, drained and finely chopped
  • 4 balls of mozzarella
  • 12 vine leaves, pickled
  • 6 tbsp olive oil
  • 2 tbsp thyme leaves
  • 1 tbsp lemon zest
  • salt and pepper
  • 400 g grapes, blue, seedless
  • 1 tbsp basil, chopped
  • 1 tbsp parsley, chopped
  • 1 tsp rosemary, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Arrange 3 vine leaves slightly overlapping each to form a circle. Place a drained ball of mozzarella on top and drizzle with a little olive oil. Sprinkle each with a little thyme and lemon zest. Distribute half of the garlic and anchovies on top, season with pepper, and seal into parcels. Secure with kitchen string. Heat 2 tablespoons of olive oil in a large pan and fry the parcels on all sides for 5 minutes. Drizzle the washed and drained grapes with a little olive oil and grill in a grill pan for 3-5 minutes. Mix the remaining garlic with the herbs, season to taste, and add salt and pepper. Serve the parcels with the grapes and a little oil drizzled on the side. Serve with a baguette. Approx. 600 kcal per serving.
